Adai Dosa

Dosas are a South Indian style crepe made of rice batter and served with different chutneys or bhajis. Adai Dosa is a twist on the traditional dosa, made with a batter of mixed lentils and spices — an extremely nutritious dish filled with proteins and vitamins, making it a perfect breakfast option.
Ingredients
- 2 cups of idli dosa batter
- 1 inch of ginger
- 4 to 5 red chilies
- 1 tsp of jeera
- Hing
- Salt as per taste
- Water
- Oil
- One small onion, finely chopped
- A small number of coriander leaves
Method
- 1
Add the idli dosa batter into a mixer and throw in 4 to 5 red chilies and a bit of water. Blend till the chilies are finely mixed into the batter.
- 2
Next, add an inch of ginger, a bit of water, and a tsp of jeera. Blend to mix well and transfer the batter into a bowl.
- 3
If you have the time, leave this mixed batter to rest for another two hours, or proceed to the next step.
- 4
Heat a pan on a medium flame and add some oil. As the pan heats up, add chopped onions, a pinch of hing, salt, and chopped coriander to the batter. Mix well. For thin, crispy dosas, add more water (without making it runny); for soft dosas, leave the batter as is.
- 5
Once the pan is hot, pour a ladle of the batter and spread evenly in circular motions, starting from the center and moving outwards.
- 6
Add a tsp of oil around the edges of the dosa. When the edges turn golden, flip over and cook for a minute.
