Tomato Gravy (Dosa Side Dish)

In South Indian homes, thakkali kurma or tomato gravy is a staple with dosas, usually served with an additional bowl of chutney for a burst of exciting flavours in every bite. This instant version uses minimal ingredients.
Ingredients
- 3 fresh, large tomatoes
- 1 large onion
- 1 green chili
- 1 teaspoon ginger garlic paste
- 5-6 curry leaves
- 1 teaspoon chili powder
- 1/2 teaspoon coriander powder
- 1/4 teaspoon turmeric powder
- 2 cloves
- 1/2 teaspoon fennel seeds
- Salt as needed
- 1 cup water
- Coriander leaves as needed
- 1/2 cup grated coconut
- 1 teaspoon fried gram
- 1/2 teaspoon cumin seeds
Method
- 1
Grind the coconut, cumin seeds, and fried gram into a fine paste.
- 2
Clean and roughly cut up the tomatoes, then grind them to a paste.
- 3
Heat oil in a deep pan or kadhai. Add fennel seeds, cloves, and cinnamon and fry slightly.
- 4
Add green chilies, onions, and curry leaves; sauté until the onions turn transparent.
- 5
Mix in the ginger garlic paste and stir until the raw smell is gone and it becomes aromatic.
- 6
Add the tomato paste and let it cook, sautéing until the oil separates on the sides and top.
- 7
Add coriander powder, turmeric, and chili powder; mix well, then add the ground coconut paste.
- 8
Add one cup of water and salt as needed; cover and let the gravy cook for 5-8 minutes, stirring occasionally.
- 9
When the froth settles, the gravy is ready — garnish with chopped coriander leaves and serve.
