Masala Appe

Masala Appe (also known as Paniyaram or Kuzhi Appam down South) is a simple, delicious recipe made from dosa idli batter — think bite-sized hybrids between a dosa and an idli, the best of both worlds, best with a side of chutney or a dollop of butter.
Ingredients
- 2 cups of dosa idli batter
- 1 finely chopped onion
- 1/2 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1/4 teaspoon asafoetida
- 7-8 finely chopped curry leaves
- 1 teaspoon finely chopped ginger
- 2 tablespoons finely chopped coriander leaves
- 1 teaspoon finely chopped chillies
- Oil as required
- Salt to taste
Method
- 1
In a large bowl, mix the dosa idli batter, curry leaves, ginger, green chillies, chopped coriander, and salt until evenly combined.
- 2
In a small pan, heat 1 tbsp oil and add the asafoetida, cumin seeds, and mustard seeds on low flame. Once the mustard stops spluttering, turn off the heat.
- 3
Pour this seasoning into the batter and mix well.
- 4
Grease an appe pan with oil. Add one tablespoon of batter into each hole, leaving room for the appe to rise.
- 5
Cover with a lid and cook 2-3 minutes; the batter will leave the sides once the bottom is cooked.
- 6
Flip each appe with a spoon or skewer, cover again, and cook 1-2 minutes until golden brown.
- 7
Repeat with any remaining batter.
