Paneer Chilli Dosa

Paneer chilli dosa is a fusion recipe — a traditional masala dosa with a Chinese twist. It's a healthy, protein-rich dish thanks to the vegetables and paneer, perfect for breakfast or a Sunday brunch, served with your favourite chutney and a cup of filter coffee.
Ingredients
- Dosa Batter
- Tomato, finely chopped – 1/2 cup
- Onion, finely chopped – 1/2 cup
- Green capsicum, sliced – 1/2 cup
- Cabbage, chopped – 1 cup
- Cottage cheese, cubed – 1.5 cup
- Chilly garlic sauce – 2 tbsp
- Tomato ketchup – 2 tbsp
- Salt – as required
- Chilly powder – 1 tsp
- Garam masala powder – 2 tbsp
- Oil – for cooking
Method
- 1
Heat a little oil in a pan. Add onion, capsicum, and cabbage; sauté for 5 minutes.
- 2
When the onion turns golden brown, add tomatoes and the spices (salt, chilly powder, garam masala) and mix well.
- 3
Add tomato ketchup and chilly garlic sauce and mix in.
- 4
Add paneer cubes and cook 3-4 minutes so the paneer absorbs the spices and sauces — this is your stuffing.
- 5
For the dosa: mix flours, salt, sugar, and about 3/4 cup water into a lump-free batter. Heat a non-stick pan, sprinkle water, and spread a generous ladle of batter in one direction.
- 6
Add 1/2 tsp oil around the dosa and cook a minute on low-medium flame. Add the stuffing to the centre and spread over the dosa.
- 7
Fold into half or roll once ready. Serve hot with tomato or coconut chutney.
