Spicy Tava Idli

An easy spicy idli fry recipe that helps you make spicy tava idlis in minutes, using ingredients already in your kitchen. Fried idlis taste great served hot, and this recipe uses butter (or ghee) instead of oil for extra flavour.
Ingredients
- Leftover idlis
- Butter: 1 tbsp
- Garlic: 1/2 tsp, chopped or paste
- Onions: 1/2 cup, finely chopped
- Tomatoes: 1/2 cup, finely chopped
- Chilli powder: 1/2 tsp
- Pav bhaji masala: 1 tsp
- Lemon juice: 1 tsp
- Salt: as per taste
- Coriander leaves: a handful, chopped
Method
- 1
Heat butter in a tava or pan. Add garlic and sauté till fragrant.
- 2
Add onions and sauté on medium flame till translucent. Add tomatoes and cook till tender — vegetables of choice like capsicum or sweet corn can go in here too.
- 3
Add turmeric powder, red chili powder, and pav bhaji masala; sauté a minute while mixing well.
- 4
Add a bit of water to keep the spices from sticking, then lemon juice and salt; mix and cook a minute.
- 5
Add the leftover idlis and toss lightly to coat with the vegetables and spices.
- 6
Garnish with coriander leaves just before serving — tastes great hot or cold, with coconut chutney or tomato garlic chutney.
